Are you looking for a nutritious idea for dinner, here you go. I love split pea and ham soup and whether you use a slow cooker, large pot or a pressure cooker this soup cooks up beautiful!
2 cup dried split peas
5-6 cups chicken stock
2 cups cubed ham
1 large onion, coarsely chopped
1 yam, peeled and diced
1 tsp garlic powder
1 tsp onion powder
1 tbsp worcestershire sauce
1 tbsp Italian Seasoning
salt and pepper to taste
Croutons for garnish
1) Combine the split peas, chicken stock, and cubed ham in a large pot. Bring to a boil and reduce heat to a simmer. Cover the pot and cook the split peas for approximately 1 hour or until tender. Be sure to check the chicken stock before and replenish if needed.
2) Add the chopped onion, diced yam, garlic, onion powder and Italian seasoning. Stir to combine and continue cooking for approximately 20 minutes or until the vegetables are tender.
3) Stir in the chopped parsley (if desired) adjust the salt and pepper to your personal tastes and serve with a slice of crusty bread. Enjoy!
4) If making in a pressure cooker, combine everything in your pressure cook. Bring to pressure and cook for 30 minutes under high pressure.
