Cooking with Chef Bryan: Shrimp Scampi

Chef Jeff's Shrimp Scampi (serves 5-8)


2 lb shrimp (raw, peeled and de-veined) 1 Tbsp. dry thyme

1 shallot minced 1 Tbsp. dry basil

3 Tbsp garlic minced 1 Tbsp. dry oregano

1/2 c. lemon juice 1 Tbsp. lemon zest minced

1 c. white wine (chardonnay or preferred) 2 tsp. salt

2 c. chicken broth 1 tsp. pepper

2 sticks butter cubed 2 Tbsp. oil


1- Prepare the shrimp and season with a little salt and pepper and arrange in oven safe single serve baking dishes or family style casserole dish.

2 - In a large saute pan over medium heat, add oil, shallot and garlic and saute until the shallot is soft (approx 3-5 min).

3 - Add the salt, pepper, zest and dry herbs and cook another minute or two.

4 - Add the white wine to deglaze the pan and cook until reduced by half. (5 min)

5 - Add the lemon juice and chicken broth and again reduce by half. (5-10 min)

6 - Remove from heat and stir in butter until it is completely melted and incorporated.(don't boil)

7 - Pour the butter mixture over the shrimp.

8 - Put the shrimp in the oven under the broiler for 5 minutes.

Remove from the oven and serve immediately
