Cooking with Chef Bryan - Grilled Peaches and Cream Creamsicle

4 peaches halved and pitted

1/2 c. honey

1 c. plain greek yogurt

1 c. heavy cream

2 tsp. Vanilla extract

1 pinch salt

1 Tbsp. sugar

1 Tbsp canola oil

Popsicle molds, amount depends on varying sizes of molds.


1) Preheat grill to medium high. Toss the halved peaches in a bowl with the oil and sugar.

Place the peaches on the grill flesh side down and cook for 6 minutes or until slightly

browned. Place the hot peaches into a blender and puree with the skins on or removed,

until smooth. Set aside.

2) In a bowl, whisk together the honey, yogurt, cream, vanilla and salt until combined.

3) Get your popsicle molds and begin to fill by starting with a little cream mixture and then

alternating with the puree until the molds are mostly full, leaving about a quarter inch to

allow for expansion. Place in freezer for 4 hours at least. Enjoy.
