Cooking with Chef Bryan - Egg Salad Sandwiches

Keep the house cool during summer with these delicious egg salad sandwiches.


6 hardboiled eggs, peeled and finely chopped

1 cup finely chopped celery

1/2 cup finely chopped carrots

1/2 cup mayonnaise

1/4 cup yellow mustard

1/4 cup dill relish (can use sweet relish too)


1) In a large bowl, combine the chopped eggs, celery, carrots, mayonnaise, yellow mustard and dill relish. Stir everything together to combine, salt and pepper to taste.

2) Slice the lettuce and tomatoes so they fit easily on a sandwich.

3) Using your favorite artisan bread or rolls, spread the egg salad onto the bread, top with lettuce and tomatoes.

4) I like to serve my sandwiches with chips and fresh vegetables. Enjoy!
