Cooking with Chef Bryan - Chicken Green Bean Salad

Easy to make salads are a great option any time of the day. I especially like salads after a hard days work and I don’t feel like cooking.

INGREDIENTS

For the Dressing: 1 tbsp dijon mustard

2 tbsp extra virgin olive oil

2 tbsp lemon juice

1/4 tsp dried thyme

1/4 tsp ground pepper

For the Chicken Salad: 2 cups shredded chicken (use a cooked rotisserie chicken)

1 lb frozen whole green beans, thawed and steamed if necessary

3 stalk of celery, chopped

3 tbsp almonds, chopped, unsalted

INSTRUCTIONS

1) To make the dressing: Add the mustard, olive oil, lemon juice, thyme and pepper to a small bowl and whisk together to combine.

2) To assemble the salad: Add the chicken salad ingredients to a large bowl and drizzle the dressing over the ingredients. Toss to coat. Serve and enjoy!
